Objective: To build a foundation for a successful training program for the participant to be a successful Line Cook.
Phase 1 – Month 1 - 2
Provide Orientation that introduces the participant to hotel policies, procedures, general operations and customer service standards.
Candidate will participate Safety and Security, trained and tested on Blood Borne Pathogens, Inappropriate Workplace Behavior and
Departmental Structure. Participants will then have SafeServe and TIPS training.
Within the department, participants will learn the restaurant and kitchen environment, proper use of equipment, location of materials
and utensils required for the job. The host training manager will introduce the participant to the process of the operation as it relates to
4. customer service, from beginning to end of customer interaction. Within the department, participants will learn the restaurant and

Phase 2 – Months 3 to 6
The host training manager will introduce the participant to the process of the operation as it relates to cooking skills, supervising from
beginning to end of customer interaction. All aspects of the business including, but not limited to; safe food handling, sanitizing, food
production and quality control will be introduced. Supervision will include weekly meeting, department briefings, and project reports,
mentoring with team leader, informal on-the-job meetings, training, and critiques, brain-storming as needed. Day to day supervision
and feedback will be provided for the candidate. It is the responsibility of the supervisor to ensure the candidate’s questions and
concerns are addressed. Reviews will be held at the end of each phase to ensure the candidate is prepared to continue in the program.
Phase 3 – Months 6 to 12
The participant will be responsible daily operations in the kitchen as a supervisor. During the final months of training, the participant
will learn the advanced skills of cooking techniques and management skills.
Within the department, participants will learn the restaurant environment, proper use of equipment,
location of materials and utensils required for the job. The host training manager will introduce the
participant to the process of the operation as it relates to customer service, from beginning to end of
customer interaction. All aspects of the business including, but not limited to; point of sale, promotions,
vendor relations, brand differentiation, food production and quality control will be introduced.
