They get where they are going more quickly & easily traveling in the thrust of one another.

When head goose is tired, it rotates back in the wing and another goose flies upfront.
Geese honk from behind to encourage those upfront. Honk.
When a goose is sick or wounded 2 other geese dropout for help & protection. They stay until it can fly or dies then they catch up with the group.
